Whole Barbecued Spiced Cauliflower, Tarragon Tzatziki, Summer Slaw by Chantelle Nicholson

Barbecued Cauliflower is not normally thought of, but give it a try as it is absolutely delicious. Brining it ensures it is seasoned all the way through.
The spice mix does not have too much heat in it, so up the chilli flakes if
you prefer. Using the cauliflower leaves in the slaw also minimises waste.

Serves 4

For the cauliflower brine
7g table salt
2 bay leaves
1 teaspoon coriander seeds
1 large cauliflower, leaves removed
and reserved for the slaw

For the spice mix
25g non-dairy butter
1 tablespoon soft brown sugar
½ teaspoon table salt
1 teaspoon cumin seeds, toasted
1 teaspoon yellow mustard seeds
½ teaspoon chilli flakes
1 teaspoon coriander seeds
½ teaspoon mustard powder
1 teaspoon smoked paprika

For the tzatziki
½ cucumber, grated
½ teaspoon cumin seeds, toasted
125g coconut yogurt
¼ bunch of mint, leaves chopped
¼ bunch of tarragon, leaves chopped
sea salt and freshly milled black pepper

For the summer slaw
¼ red cabbage, finely sliced
1 nectarine, halved, stoned and julienned
100g sugar snap peas, finely sliced
100g rocket, finely chopped
2 tablespoons sesame seeds, toasted
¼ bunch of coriander, leaves finely chopped
50ml Sesame Vinaigrette (see page 186)

First make the cauliflower brine. Bring 100ml of water to the boil with the
salt, bay leaves and coriander seeds. When the salt has dissolved, add
900ml of cold water and submerge the cauliflower in it for 2 hours.

Preheat a barbecue or griddle pan until hot. Combine all the spice mix
ingredients, then remove the cauliflower from the brine, pat dry, and brush
all over with half the spiced butter.

Place on the hot barbecue or griddle pan. Cook all over until a deep golden, then brush with the remaining spiced butter and wrap in foil and put back on the barbecue or pan. Cook in the foil for 20–25 minutes until a skewer inserted into the centre meets no resistance. Remove the cauliflower from the foil and place back on the barbecue, drizzling the cooking juices from the foil over the top.

For the tzatziki, mix all the ingredients together and season to taste.
for the summer slaw, mix all the ingredients together, including the sliced
cauliflower leaves, then season well and dress with the vinaigrette.
Slice the spiced cauliflower and serve drizzled with the tzatziki and the slaw
on the side.

What’s the USP? Recipes from one of Cornwall’s best-loved beach restaurants, famous for its open-air feast nights.

Who’s the author? Simon Stallard is the chef and owner of The Hidden Hut, a casual beachside restaurant set in ‘an old wooden shed’ on a coastal path near Truro. Stallard worked around the globe from ‘New York to New Delhi’ before settling in Cornwall and opening the Hut in 2010.

What does it look like? The numerous scene-setting photographs mean that you can almost feel the sand between your toes and smell the salty tang of the sea. Reading the Hidden Hut will make you want to jump in the car and immediately head for the south Cornish coast. The colourfully rustic food looks very appealing, the sort of pleasingly unpretentious stuff you just want to get stuck into.

Is it good bedtime reading? Not so much, just a short introduction and a ‘How to cook over fire section’ (cooking over a wood fire in the open air is what Hidden Hut feast nights are all about and Stallard shares his expertise over a 10-page section of the book).

Will I have trouble finding ingredients? You will be at an advantage if you live by the coast and can get your hands on spider crabs, octopus and gurnard, but as long as you can get to a good fishmonger you’ll be fine.

What’s the faff factor? Dishes range from a straightforward mid-week meal of lamb cutlets with butter bean mash and fresh mint sauce to a special-occasion-only slow roasted goat in preserved lemons, but overall the food is about as far from overwrought, tweezered complex restaurant food as you can get.

How often will I cook from the book? With recipes for breakfast (smokey bacon pastries), lunch (chicken and wild garlic soup), picnics (green pea scotch eggs) and parties (seafood paella for 40) as well as lots of delicious dinner ideas, it’s difficult to say when you won’t be cooking from the book.

Killer recipes? Despite the crab on the cover, this is not just a seafood cookbook. In addition to dishes like red-hot mullet with sticky rice balls and cucumber salad and Summer sardines with saffron potatoes and oregano dressing, there’s plenty of meat and veg in the form of 12-hour lamb with smoky aubergine, and samphire frittata with warm lemony courgette salad.

What will I love? There’s a real feel-good factor about the book, open it at any page and you’ll be inspired to get in the kitchen and cook.

What won’t I like? If you want super serious, complex cheffy cooking, this is not the book for you.

Should I buy it? The Hidden Hut is the sort of book with recipes that will become perennial favourites that you’ll find yourself going back to time and time again. So that’s a yes.

A real crowd pleaser, this chargrilled whole fish is just beautiful in its simplicity. Stuffed with soft herbs and slices of lemon and garlic, the fish is cooked until the skin turns crisp, with striking grill lines. It comes with a slightly sharp herby sauce, which adds a burst of greenness as well as lots of flavour.

Serves 4–6

1 × 2kg wild sea bass, gutted and scaled
olive oil, for coating
2 handfuls of flat-leaf parsley leaves
leaves from a handful of lemon thyme sprigs
1 large lemon, sliced
1 large garlic clove, thinly sliced
5 bay leaves
½ onion
extra-virgin olive oil, for drizzling
lemon wedges and crusty bread, to serve

FOR THE VERDE SAUCE
7 anchovy fillets in vinegar, or 4 if using salted
10g wild garlic leaves or 1 garlic clove, peeled 2 tbsp capers
20g basil leaves
15g flat-leaf parsley leaves
1 heaped tbsp lemon thyme leaves
juice of ½ lemon
125ml extra-virgin olive oil sea salt and freshly ground
black pepper

To make the verde sauce, rinse the anchovies if using salted, then put them and the remaining ingredients, apart from the olive oil, into a mini food processor and blitz until finely chopped. Gradually pour in the olive oil and blend to a fairly smooth sauce, then season with salt and pepper. (Alternatively, if you prefer a chunkier sauce, finely chop the anchovies, garlic, capers and herbs, or use

a pestle and mortar, then add the lemon juice. Gradually stir in the oil.) Spoon the sauce into a bowl and set aside.

Light the fire pit (or you could use a wood-fired grill or a barbecue) about 30 minutes before cooking, following the instructions on page 76. You want a medium-high heat on one half of the fire-pit grill (check out the method for two-zone cooking on page 78). The rack should be about 20cm above the heat source.

Rinse the sea bass in cold running water, then pat dry inside and out with kitchen paper. You could cut a slash behind the head to enable heat to reach the collar, but I don’t tend to slash the sides – the skill is in creating bass crackling.

Rub the fish all over with a good coating of olive oil. Stuff the parsley, thyme, lemon slices and garlic into the fish cavity, then top with the bay leaves. Season with salt and pepper.

Rub the grill rack with the cut side of the onion to stop the fish sticking to it, then put the sea bass directly on the hot side of the fire-pit grill. Grill the sea bass for 4 minutes on each side, carefully turning/rolling it over using two fish slices. Move the fish over to the cooler side of the grill and cook for 3 minutes on each side or until the skin is crisp and the flesh starts to flake away from the bone, especially around the base of the head.

Serve the sea bass with a splash of olive oil and the lemon wedges, verde sauce and chunky slices of crusty bread.

Chicken and wild garlic soup by Simon Stallard

Wild garlic is abundant in local woodlands. They are small ground- covering plants with broad leaves and a little cluster of white flowers during the spring, and they are often found alongside bluebells. If you come across any wild garlic when you are out and about, this recipe is a lovely way to make the best of it. This is an enriching dish full of the flavours of spring.

Homemade stock really is better made with the whole bird, so buy a whole chicken and joint it. Use the carcass and legs for this recipe and freeze the breasts (or use them in the Charred Chicken and Squash Salad on page 104). To make the soup more substantial, cook 200g dried rice noodles and put them in the bowl before adding the soup, if you like.

Serves 4–6

3 tbsp sunflower oil, plus extra for roasting
1 large chicken, jointed (you can ask your butcher to do this) and breasts reserved for another recipe
3 celery sticks, roughly diced
1 onion, roughly diced
1  leek,  roughly  chopped
1  large  garlic  bulb, cloves peeled
100g wild garlic leaves, roughly sliced (keep the flowers if you have them)
4 spring onions, finely sliced on the diagonal
a small handful of mint leaves, ripped
a small handful of coriander leaves, ripped
sea salt and freshly ground black pepper

Preheat the oven to 220°C (200°C fan oven) gas mark 7. Heat the sunflower oil in a large saucepan over a high heat and add the chicken legs, skin side down, along with the wings and the carcass (you may need to do this in batches, depending on the size of your pan). Fry over a very high heat, to brown all over. Transfer to a roasting tin and coat in a little more oil and a pinch of salt. Roast for 15–18 minutes until a deep golden brown.

Add the vegetables to the same pan (there should still be some oil in there) and put it back over a medium heat. Sweat the veg for 2 minutes or until starting to soften but not colour.

Once roasted, return the chicken to the pan and pour over 2 litres cold water. Season with salt and pepper. Bring to the boil, then reduce the heat and simmer for 1½ hours. Strain the soup and return the broth to the pan. Take the chicken from the sieve, remove the skin and shred the meat from the bones, discarding the bones and skin. Leave the meat to one side.

Divide the wild garlic among serving bowls and top with the spring onions. Divide the shredded chicken between the bowls and add the herbs.

Taste the broth and check for seasoning, adding more salt and pepper if needed. Ladle it over the chicken and greens in the bowl, and sprinkle over the garlic flowers, if you have them.

Gunpowder by Harneet Baweja, Devina Seth and Nirmal Save

Gunpowder

What’s the USP? ‘Explosive flavours from modern India’ runs the subtitle. In reality, this is a collection of recipes from Gunpowder, a ‘home-style Indian kitchen restaurant’ in Spitalfields London.

Who’s the author? Husband and wife team Harneet Baweja and Devina Seth opened the 20-cover Gunpowder restaurant close to Brick Lane in 2015 with head chef Nirmal Save. This is their debut cookbook.

What does it look like? Mouthwateringly good. Recipes collected from family in Kolkata and Mumbai and inspired by Indian street food have been given a makeover with attractive modern plating. There’s some moody black and white scene-setting shots of the restaurant and its kitchen and some boldly colourful shots of the subcontinent.

Is it good bedtime reading? There is very little additional text aside from a two page introduction and a spice glossary. Chapter and recipe introductions are concise and to the point.

Will I have trouble finding ingredients?  Unless you can shoot it yourself, you’ll need a good butcher to find you some wild rabbit to make the pulao recipe and you may have trouble finding pomfret (but you can just substitute John Dory the recipe says) but otherwise it’s pretty mainstream stuff.

What’s the faff factor? There are the long ingredient lists of numerous spices that you’d normally associate with Indian cooking which make the recipes look more complicated than they actually are. In reality, most of the dishes are striaghtforward and well within the capability of any confident home cook.

How often will I cook from the book? If you love Indian food, you might well find yourself taking the book from your shelf on a regular basis.

Killer recipes? Chutney cheese sandwich; mustard broccoli with makhana sauce; Maa’s Kashmiri lamb chops; wild rabbit pulao; blue crab Malabar curry.

What will I love? The small plates chapter is full of inspiration for something a little bit different for breakfast (chickpea pancakes with fried eggs and tomato and coriander chutney) lunch (kale and corn cakes) or beer snacks (kadai paneer parcel; a spicy cheese and puff pastry roll) while the list of alcoholic and non-alcoholic drinks will put a spicy spring in your step.

What won’t I like? At under 200 pages, this is not the most comprehensive cookbook in the world.

Should I buy it? A diverse collection of delicious sounding, attractive looking dishes that are not too demanding to cook and suitable for any number of occasions and times of the day. If you like Indian food, you are going to love this book.

MUSTARD GRILL BROCCOLI

SERVES 2 AS A MAIN, 4 AS A STARTER OR SIDE

We use mustard a lot in the east of India and here we pair it with broccoli, which is in the same family. In India, you often see this dish made with cauliflower, so you could easily interchange them. We prefer broccoli for the restaurant, as it really soaks in all the flavours and gets even crisper when flashed under the grill. It’s one of the most popular vegetarian dishes at Gunpowder. We think it’ll become a favourite in your home, too.

1 head of broccoli, halved
100g Greek yogurt
50g full-fat cream cheese
2 tablespoons wholegrain mustard
½ teaspoon chilli powder
1 teaspoon chaat masala
1 teaspoon ground turmeric
½ teaspoon ground coriander
¼ teaspoon ground cumin
2 tablespoons mustard or rapeseed oil, plus 1 teaspoon
1 tablespoon chickpea flour
2–3 tablespoons ghee, melted
sea salt
Makhani Sauce (see below) and pickled beetroot, to serve

1 Bring a pan of salted water to the boil and cook the broccoli for 3 minutes, then drain and rinse under ice-cold water to prevent it from cooking further. Shake off any excess water and set aside.

2 In a large dish, mix together the yogurt, cream cheese, mustard, chilli powder, chaat masala, turmeric, coriander, cumin and the 2 tablespoons of mustard or rapeseed oil.

3 Set a frying pan over a medium heat and toast the chickpea flour for 30 seconds. Add the remaining 1 teaspoon of oil, mix, and toast for a further 30 seconds, making a fragrant paste. Whisk this into the yogurt mix, then thoroughly coat the broccoli in the creamy spice paste and set aside to marinate for 30 minutes.

4 Set your oven grill to high and grill the broccoli, cut-side down, for 10–15 minutes, basting it with the melted ghee. When golden on top, turn over and grill 5 minutes on the other side, or until nicely coloured.

5 Serve on a base of Makhani Sauce with pickled beetroot sprinkled on top.

MAKHANI SAUCE

MAKES 250ML

2 tablespoons unsalted butter
2 garlic cloves, very finely chopped
2 teaspoons grated fresh ginger
500g tomatoes, diced
½ teaspoon ground fenugreek seeds
½ teaspoon cumin seeds
3 cloves
3 green cardamom pods
¼ teaspoon freshly ground black pepper
a pinch of chilli powder
¼ teaspoon freshly grated nutmeg
2–3 tablespoons double cream
1 teaspoon honey, or to taste (optional)
sea salt

1 Set a frying pan over a high heat and add 1 tablespoon of the butter. Once melted, add the garlic, ginger and a pinch of salt and cook for a minute.

2 Fold the tomatoes and all the spices through. Cook over a medium heat for 5–10 minutes until the tomatoes have broken down and darkened in a colour a little.

3 Spoon the mixture into a food processor or blender and blend until fairly smooth. Press through a sieve, giving you a smooth sauce. Warm the sauce gently in a saucepan with the remaining tablespoon of butter. Once the butter is melted, swirl in the cream.

4 Let the sauce gently bubble away over medium-low heat for about 5 minutes until it has thickened and darkened further. Season with salt and the honey, if needed, to taste. Serve warm.

Larder by Robin Gill

What’s the USP? An urban update on traditional larder-driven cooking based around fermentation, curing, pickling, flavoured butters and oils, stocks, sauces and seasonings.

Who’s the author? Irish-born, London-based chef Robin Gill has revitalized the capital’s dining scene with his distinctive take on top drawer cooking set in casual surroundings at The Diary, Counter Culture and Sorella, all in Clapham.

What does it look like? There’s a distinctly rustic feel to the whole thing with matt finish pages, pictures of Gill on the farm, by the shore or posing with a brace of rabbits and food plated on vintage or earthenware crockery. I wouldn’t want to utter that overused and lazy term ‘hipster’, but you get the idea.

Is it good bedtime reading? Although first and foremost a recipe book, there is plenty of food writing to enjoy in the form of substantial recipe introductions, producer profiles and general musings on cooking techniques and ingredients. The autobiographical introduction provides a fascinating, and at times troubling, look behind the scenes of the restaurant industry.

Will I have trouble finding ingredients?  Cod collars, pig’s head, buffalo milk, Baron Bigod cheese, chardonnay vinegar, espelette pepper and dried wakame mean that you’ll have to look further than your local Tesco for many of the recipes.

What’s the faff factor? Don’t be fooled by the rustic vibe; Gill has worked in some very serious kitchens and although the food is presented in a naturalist way, there’s often lots of work gone into making it all look laid back and simple.

How often will I cook from the book? Because many of the dishes rely on larder recipes (the hint’s in the title) some of which take days, weeks, months or even a year before they are ready, this is more a culinary philosophy that you need to buy into than recipe a book that you can easily dip in and out of.

Killer recipes?  Galician octopus with summer vegetables and nduja brioche; belted Galloway onglet, piatone beans, young garlic and hay; game faggots, celeriac, toasted hazelnuts; white peach with almond skin ice cream, elderflower jelly.

What will I love? The extended larder section provides a real insight into Gill’s style of cooking so you get a real sense of what makes his restaurants so different and special. There is also an excellent selection of inventive cocktails including Panic! At The Pisco made with pisco, white vermouth and rhubarb puree and even a recipe for homemade pumpkin beer.

What won’t I like? The lack of quick and easy dishes. But there’s more than enough of those sort of books knocking about already if that’s more your thing.

Should I buy it? If you want to learn the techniques behind contemporary British restaurant cooking and employ them in your own home (or your own gaff if you’re a chef) this is an essential purchase.

What’s the USP? Cutting edge, natural cooking from a leading New York chef.

Who’s the author? Two Michelin-starred, Swedish-born chef Fredrik Berselius of Aska restaurant that’s located in a Brooklyn back street under the shadow of the Willamsburg Bridge.

What does it look like? The book is a very desireable object with its textured black and gold cover, elegant design and stunning landscape,  portrait and food photography.

Is it good bedtime reading? In addition to the inspirational food, Berselius writes evocatively about his homeland of Sweden, his foraging trips to upstate New York and being a restaurateur and chef in Brooklyn.

Will I have trouble finding ingredients? Recipes tick all the modish ‘New Nordic’ boxes with ingedients like aged diary cow, birch, buttermilk, lingonberries and white currents, some of which may be tricky to track down for the home cook.

What’s the faff factor? Berselius has his own distinctive style. Some of the the most impactful presentations are the most simple, yet belie the numerous processes that go into their creation. Lamb Heart Burnt in Bedstraw appears to be a black disc on the plate but is in fact brunoise of fermented sunchoke, sunchoke emulsion and rendered lamb heart fat dusted with a powder of lamb heart that’s been cured, dried, grated, dry-fried, burnt with bedstraw, dry-fried and burnt a second time then blended and passed.

How often will I cook from the book? Techniques such as smoking, pickling and fermenting (along with a fair bit of foraging) mean that cooking from the book will require a fair amount of committment in terms of time, energy and organisation. Definately not the book to reach for when you come home late from work and need to rustle something up in 20 minutes.

Killer recipes? Lichen, caramelised cream, pine mushroom, spruce and chanterelle; grilled eel head on a branch; mackerel and black locust; sourdough, smoked hake and toasted milk.

What will I love? Berselius might be a resolutely urban chef saying, ‘I knew I wanted to be in New York. I fell in love with the city as soon as I set foot here’, but his cooking draws on formative experiences and memories from growing up in the suburbs of Stockholm and visiting his grandmother in the north of Sweden with its ‘reindeeer and white and black birch bark’ and summers spent among the ‘wheat, oat, rapeseed, grazing cows, and horses’ of the lowlands. Berselius’s achingly beautiful creations put nature right there on the plate in front of you. The food ranges from delicate (lenghts of pickled and compressed cucmber are artfully decorated pickled linden flowers) to red in tooth and claw (truffles made from pigs blood, butter and rose hip) but always seem to evoke some wild Nordic landscape.

What won’t I like? Some readers may find the book a little po-faced and over serious.

Should I buy it? Aska provides genuine insight into the mind of an exciting chef who is pushing the boundaries of his own creativity. As accomplished as Berselius obviously is, I get the feeling that there is much more to come from him. Roll on Aska book two.

Book extract: First, Catch by Thom Eagle

I seek out and devour food writing in all of its forms – from lengthy and flowery introductions, through drily academic histories to the tersely scribbled instructions you sometimes find tucked into old cookbooks. But when I think of all the recipes I have read, professionally or otherwise, stacked up as it were in one gigantic pile on an overflowing workbench, the main sensation I feel is frustration.

All those neat little lists – take this, take that – as if cooking begins when you pick up an onion, or finishes as the dish goes on to the plate. So much more surrounds a meal and its making than just the bare facts of its enumerated parts. At the top of the page it just says ‘two onions,  chopped’, but someone had to grow them, to pick them, to store and transport and buy them, all before you take them from the vegetable rack or the fridge, halve them from root to tuft, and peel off the outermost layers of brown parchment; before you cut first in a wedging arch and then across, remembering the cook who taught you to let the onion fall into its own layers rather than force it apart into rigid dice, and wondering perhaps in passing why you are doing so, when the other recipe said sliced, when the other recipe contained no onion at all. The Koreans have a description for the specific qualities of a person’s cooking which translates as something like ‘the taste of your hands’; they know, I suppose, that knowledge rests in muscle and bone, which is never written down.

I have nothing against recipes. In fact I use them all the time, and am suspicious of cooks who claim never to do so. Recipes are a record of social and emotional histories as well as a means of travelling to almost any country or place you care to name, including, of course, the past. Anyone who tries to separate food from all of these things cooks for reasons I do not understand; it can only, I think, be vanity, trading the deep satisfaction of time for immediate gratification.

Yet, while useful to cook from, there is so much that recipes miss. The satisfaction of peeling a ripe, thick-skinned tomato, for instance, or unzipping a pod of broad beans; the smell of rosemary hitting gently warming olive oil; the yielding of a wing of skate to a gently pressing finger; the sight of a simply laid table in spring, awaiting the arrival of both people and lunch. None of this can be captured in a written recipe. These are sensations we feel behind the lines of our cookbooks, but the rigid lists that now fill them leave little room in which to do so, let alone to think about what we will do with this dish once we have cooked it. ‘Serve immediately’, these instructions end, but who to? Even a thousand recipes don’t make a meal.

Of all the contexts surrounding the acquisition and transformation of food, I think the meal itself is the most often forgotten. We cook in competition with ourselves now, imagining some bespectacled judge pacing around our chopping board and offering disparaging comments on our knife skills, our plating and our personal hygiene, while we collect and compare recipes of so-called genius and perfection, to be followed to the last detail. Whatever tortured dish emerges from such a process is designed not to be dug into with a questing fork, but to sit as it were under glass, to be admired one-on-one, alone. A plate is one part of a course, which is one part of a meal, so why fuss over the recipe so? I’d rather have, for example, a litre of wine, a pile of fresh pea pods, and many hands to peel and pour – with maybe a piece of cheese for afterwards.

The Mushroom Cookbook by Michael Hyams & Liz O’Keefe

What is it? A directory of the most widely available mushrooms, both wild and cultivated, plus a collection of 50 mushroom-based recipes. Michael Hyams, based in Covent Garden Market, is apparently known as The Mushroom Man and supplies markets and restaurants with fungi while co-writer Lix O’Keefe is a chef, recipe developer and food stylist.

What’s the USP? From morels to mousseron and portobello to pom pom, Hyams describes in detail 33 of the most widely available wild and cultivated mushroom varieties, listing alternative names, their Latin name, where the mushroom can be found and when, along with a detailed description of its appearance, flavour and texture and how it should be prepared and cooked. In the second half of the book, O’Keefe provides 50 ways to cook your fungi.

What does it look like? It’s a game of two halves. The first half that contains the directory is a reference work with the emphasis on providing simple, clear and well organised information. The photos are mainly of unadorned mushrooms against a white or grey background accompanied with step by step illustrations of how to clean and prepare them. By contrast, in the second recipe half, there is a serious amount of food styling going on with all manner of folded napkins, trays, boards, slates and other props to liven up proceedings.

Is it good bedtime reading? Although there is a lot to read in the book, it’s more of a reference work than something you’d want to cuddle up to last thing at night.

Will I have trouble finding ingredients? There are a decent selection of fresh and dried mushrooms available in supermarkets these days and doubtless, you will find suppliers online (none are given in the book however) but for the more obscure varieties like lobster and saffron milkcap you might have to head out on an expert-led foraging trip (don’t try it by yourself – as the introduction points out, the book is not designed to be an identification guide for foraging and there are lots of poisonous varieties out there).

What’s the faff factor? A mix. There’s simple like creamy mixed mushroom and tarragon soup and there’s I’m-simply-never-going-to-make-that (mushroom sushi).

How often will I cook from the book? It really depends how much you like mushrooms; for most people, once in a while.

Killer recipes? Chinese mixed mushroom curry; Asian mushroom and pork ramen; wild mushroom and boar sausages

What will I love? The price. A 250 page, full-colour illustrated hardback cookbook for £15 is excellent value.

What won’t I like? Some of the recipes, like mushroom sushi, are a little gimmicky, there are some odd flavour combinations (Camembert and blackberry fondue on your mushroom burger anyone?) and some of the dishes like whole roast salmon with garlic pesto and truffle look messy and unappetising.

Should I buy it? At the knock-down price, it’s worth picking up for the mushroom directory alone.
